Katie-bug Lady bug

My beautiful niece turned ONE today! It’s hard to believe that she has been in our lives for only a year. She has brought so much joy to all of us. I love it when I can get a little smile out of her. I’m so excited about staying with my parents this week so she can get to know me better and hopefully want to let me hold her more!! My sister did a great job with the birthday party. The lady bug theme was perfect for her!!

The K with a lady bug was so cute. These were the best cookies. I usually don’t even care for cookies, but these were amazing!!

Lady bug cupcakes with a giant lady bug smash cake. She didn’t smash it though. She’s very dainty like that.

The kids got little backpacks with goodies inside. The girls got lady bugs.

H&B also made these cute embroidered matching shirts for mom and baby girl!

These were cute little appetizers. They are just crackers, herb cream cheese, cherry tomatoes cut in half, black olive halves, and decorating gel to make them look like little lady bugs. I helped decorate them.

Graduation Season!

I have decided that everyone I know must have had children in the same year.  I must have gotten 20 high school graduation invitations this year.  I am so proud of all of my friends’ children because it seems as everyone of them has excelled in their education.  Yesterday, we went to Houston for a graduation party for one of my favorite young ladies.  It seems like only yesterday her parents were getting married and now they have a daughter that is a high school graduate!  It’s crazy how time flies.  Despite her choice of where to go to college, I am so proud of her!  She has become such a beautiful, responsible, caring, young lady!  I know she is going to do well in her life!!

Kahlua Cake/Trifle

My father-in-law is turning 70 this weekend, so I wanted to make something for his birthday party.  When we were younger, he made a kahlua cake that was so strong that none of us could eat it.  I saw this recipe and immediately thought of him and that cake.  Since this is such an easy recipe,  I thought I’d do a test run before the party to see if I can make one that is actually edible.  It was.  I think I could maybe even use a little more kahlua in the cake I make this weekend!
1. Cake
Bake a cake. I used a white cake because my father-in-law and I don’t like chocolate cake, but the original recipe called for chocolate cake. Once it’s cool, poke holes all over it, then pour kahlua all over it.  I used about 1/4 cup, but you can use more or less depending on your liking. Let it soak for at least an hour. Once you’re ready, cut the cake into 1 inch size slices.
2. Mousse
Make chocolate mousse. I used the recipe on the Dream Whip Chocolate Mousse box.  I didn’t make enough at first, so use every packet in the box.
3. Cool Whip
You can use store bought or make your own.  Since this is for my f-i-l’s birthday, I made my own mixing heavy whipping cream and sugar to taste.
4. Candy Pieces
Crush some Heath or Skor bars into decent sized chunks.  I used a meat pounder to crush them, you can also use a hammer.  You probably need about 5 – 6 bars.
Assemble
This looks the prettiest in a deep glass bowl or trifle dish if you have one.  You can use whatever you have.  Layer cake cubes, then chocolate mousse, then whipped cream, then candy pieces.  You can repeat until your dish is filled, but end up with the whipped cream and candy pieces on top!
