Chicken pizza casserole

Trying to find keto friendly recipes. I think my husband found this on a Keto For Dummies page, but we added the Raos and didn’t measure. It called for you to shred your chicken and we just bought ground chicken. It worked out great.

I did not use any measurements, I just threw in a bunch of stuff.

Ingredients:
Ground chicken
Cubed zucchini
Whole-milk Ricotta Cheese
Pepperonis
Minced Garlic
Mozarella Cheese
Grated Parmesan
Half bottle of Raos Marinara sauce

Preheat oven to 350 degrees
Cook chicken in a skillet
Throw in all the ingredients except half the pepperoni and half the mozzarella into a 9X12 pyrex and stir it up real good. Put in the oven for 30 minutes. Take out and add cheese and pepperoni to the top and cook for another 10 minutes.

Turned out delicious! I’ll make this again.

Air Fryer

My husband and I are on a new diet that is really working for both of us.  So far, after 11 weeks, we are down a total of 68 lbs.  I’m down 26 and he’s down 42!  We are hoping that the weight loss will lead to less medications.  We’ll find out about that on Thursday.  One of the things that we are doing is using an air fryer to cook our lean and green meals.  I love this air fryer because it’s SOOOO easy to cook great food with it.  I cooked this salmon in 10 minutes.  All I did was get Salmon, sprinkle some Ms. Dash on it, and turn it on for 10 minutes at 350 degrees.  Bam! The Lean part of my meal is complete!! I highly recommend this air fryer.  It’s really easy to use and cleans up easily too!

Chicken Spaghetti

Whole wheat pasta broken in half
Can of mushroom soup
Big block of Velveeta 2%
Can of petite diced tomatoes
Can of Ro-Tel
Garlic to taste
4 Baked Shredded Chicken Breast
About a cup of shredded Mozzarella

Bake some chicken. I baked the chicken breast covered with some lemon pepper, woo, and some other spices I found in my cabinet.  I put it on 450 for about 50 minutes.  After I pulled it out of the oven, I shredded while it was still hot.

Boil some spaghetti.  I like the whole wheat pasta, myself. Drain. Put back in the pot.

Add in cut up Velveeta, a can of cream of mushroom soup, chicken, can of Rotel, and a can of diced tomatoes.  If you like additional spices, you can add garlic and pepper, too. Stir this up until the Velveeta is melty.  I had to keep the burner on low to help with the melting.

Put all of this in a big pyrex pan.  Add Mozzarella cheese on top.

Put in the oven and cook at 375 for about 35 minutes, or until your cheese gets a little burnt looking.

Serve and enjoy!!

21 Day Fix Zucchini Lasagna

Ingredients
3 Large Zucchini
Grandma’s sauce (from Fixate cookbook) with ground beef
Mozzarella Cheese
2 Eggs
Cottage Cheese
Turkey Pepperoni (optional)

Directions:
Make a mixture of eggs, cottage cheese and Mozzarella Cheese
Cut Zucchini into strips
Make Grandma’s Tomato Sauce with browned ground beef

Put a layer of the meat sauce, then a layer of zucchini, then a layer of meat sauce.

Put a layer of the mozzarella cheese/egg/Cottage cheese mix on top of that.

Cook in oven at 350 for 40 minutes.
IMG_2278Put mozzarella on top, then cover with the turkey pepperoni. Cook for another 20 minutes.

Depending on how much you eat, you will use at least a green, blue, purple, and red.

Easy banana pudding 

This year we volunteered to bring banana pudding to the family Thanksgiving dinner.  I’m not sure what made my husband volunteer for this since neither of us has ever made banana pudding, but he did.  So here it is.  It was a lot easier than I thought it would be.  I’m sure that grandmothers everywhere are shaking their head at us since we went the easy route, but I’m not ready to attempt any of those hard recipes; especially, when this easy recipe is so good.

Ingredients:
1 (8 ounce) package of cream cheese (softened)
1 (14 ounce) can sweetened condensed milk (Fat Free)
1 (5 ounce) package instant vanilla pudding mix
3 cups cold milk
1 tsp. vanilla extract
1 (8 ounce) container frozen whipped topping, thawed
4 sliced bananas
12 ounce package vanilla wafers

In a large bowl, beat the cheese until fluffy.  Add in condensed milk, pudding mix, cold milk and vanilla. Beat until smooth.  Fold in 1/2 of the whipped topping.

Line the bowl with vanilla wafers, layer banana slices on top of that.  Put a layer of the 1/2 pudding mix.  Layer wafers, bananas, then pudding.  On top of that cover with vanilla wafers, bananas and top with leftover whipped topping.

Refrigerate for at least 3 hours.

YUM!!

Meal Prep

The key to the 21 Day Fix is meal preparations.  I decided I’m only willing to eat food that have been in containers for three days at a time, so here is what my three days looks like!

Breakfast:
Shakeology:  Shakeology, 1/2 banana, flax seeds, coffee

Mid-morning snack:  1 egg cup with tortilla

Lunch:  Chicken, Veggie Mix

Mid-Afternoon snack: 2nd Egg cup/whole wheat tortilla, Fruit

Dinner:  Pork tenderloin, Lettuce w/ Balsamic Vinegar, Veggie Mix

What’s your favorite?

I started the 21 Day Fix this week.  It’s going to be so easy to stay on track with my diet if I am able to prepare my meals for the week each Sunday.  This should eliminate me making those bad food choices when I get hungry.  No more binge eating for me!! Meal prepping can be a pain, though, so it’s nice to be able to eliminate the preparation for one meal a day by substituting Shakeology.  I drink the Shakeology for breakfast since I’m not always in the mood to eat when I get up!  I’m still debating over which one is my favorite.  What’s yours?

Eggs on the Go!

I’m constantly looking for recipes for my low carb diet.  I was really excited when I found this idea that is easy to make AND a great time-saver!!

You can make about a week’s worth of eggs at one time using this recipe. I’m eating these for my mid-morning snack, but you can also eat it for breakfast or at some other time.

I worry about leftovers going bad, so I didn’t make all twelve eggs, but I think these should last about a week.  Although, if it smells bad, don’t eat it!! I figure it will be about three days before they’re all eaten.

 

Ingredients:
Eggs
Pre-cooked sausage
Cheese
Jalapenos

**You can add other ingredients that you like, such as spinach, mushrooms, onions, etc.  These are the things I like!

Directions:
Spray pam on a muffin pan.  Add egg, sausage, cheese and jalapeños.  Put in oven at 350 for about 15 minutes.  Pull out of the oven and put them in your belly or in a tupperware for future meals on the go!

Jalapeño Sausage Balls

This is a year of creating new Christmas traditions!! My new German Shepherd puppy, Kaizer, finally has all of his shots and is able to go to places that other dogs go.  First stop on Christmas morning was to take him to the Katy Trail for a walk.  While we were out, we noticed that the Katy Trail Ice House had the fire pits going, so after our walk, we went and warmed up by the fire.  I’m not sure if they were open on Christmas day, but they were nice enough to come build a fire and leave water for all the people who exercise on the trail.  Kaiser absolutely loved being out there and greeting all the other dogs.  We have hereby renamed the Katy Trail to the Kaizer Trail and the Katy Trail Ice House is now the Kaizer Trail Ice House.

After the walk on the Katy Trail, we went home and made Jalapeño Sausage Balls.  They were so delicious and will be how we start off all of our future Christmas mornings!! They are SO easy to make and they are SOOOOO good!! I wasn’t sure I’d like the jalapeño in them, so I made half with peppers and half without. From now on I will make them ALL with the jalapeños!!

2 Cups of Bisquick
1 Cup of Cheese
1 lb of browned sausage (I prefer the Hot)
Diced Jalapeños to taste

Combined the ingredients until all the Bisquick is mixed together and there is no dry flour. Roll the mixture in to small balls and put on a cookie sheet.  Bake at 350 for 20 – 25 minutes until brown.

Easy Cowboy Cornbread Casserole

I saw this recipe on Facebook last month and it’s been on my mind ever since.  I’ve been waiting on the weather to get a little cooler since cool weather and cornbread go hand in hand!  I’m pretty sure that this isn’t low carb, but sometimes you have to live a little!  This was well worth the wait!  Where has this been all my life!?

Ingredients:

Corn Bread 
2 packages of Mexican Cornbread Mix
1 can of Cream Style Corn
Jalapeño slices
Eggs
Milk

Center
2 lbs Hamburger Meat
2 cans rotel
1 can Ranch Style Beans
Chopped onions
Bag of shredded Cheese

20131006-195340.jpgBrown the ground beef, drain the grease….add ro-tel, onions, and ranch style beans.  Simmer for 10 minutes.

Make the cornbread according to directions on the back of the bag, add Can of Cream of Corn, jalapeños and half of the bag of cheese.20131006-195410.jpg

Grease the bottom of the 8×12 casserole dish.  Pour half of the cornbread mix to the bottom of the pan. 20131006-195424.jpgAdd the meat mixture, then put the other half of the cheese on top.

20131006-195449.jpgCook in the oven at 400 degrees for 45 minutes or until you can poke a toothpick in the middle and not get any mix on it.
