Jalapeño Spinach Cream Cheese Stuffed Chicken
Not only was this a long weekend and Easter Weekend, it was also the first Monday of the month, which means Canton Trade Days was going on this weekend. I was looking on Facebook and saw a notice reminding me about the events in Canton and decided to take an impromptu trip out there to see what they had. I was so excited when I found some fun flip flop sandals for myself. They had a really good deal in one of the booths to buy two and get the third pair for a reduced rate. Since I really only liked two of the pairs they had, I bought the third pair for my sister. I think my favorites were the ones that I got her, but they didn’t have that style in my size. I’ve already worn both pairs I bought two times, and my sister wore hers for Easter brunch, so I’d say the trip to Canton was a success!!

These aren’t the ones I bought my sister, but they are very similar.
I saw a stuffed chicken on pinterest and even though it looked a little fancy for my cooking skills, I decided to give it a try. It really was an easy recipe and I have to say one of the best things I’ve made. I’m pretty sure it’s all the cheese that is in the stuffing that made it taste so good. The only advice I have is to remember to take the toothpick out when it’s done cooking. I learned that one the hard way!!
Ingredients:
Chicken breasts
Block of Cream Cheese
Cheddar Jack Cheese
Spinach
2 Jalapeños
Garlic
Lemon Pepper
Paprika
I didn’t put any amounts because I just put in the amounts I liked. I only used 2 Jalapeños and I just put a spoonful of minced garlic that was already preminced from the grocery store.
Cut the jalapeños in to small pieces. I cut out all the seeds first. You can leave a few in if you like it kind of spicy.
Sautee the jalapeños and garlic in olive oil. This was way too much olive oil and I had to drain it.
Add Spinach to the sauteed jalapeños and garlic.
Put cream cheese, cheese and sautéed spinach jalapeno mix in a bowl and mix it up.
It will look something like this. This is what you stuff inside the chicken.
Cut the chicken in half like a pocket. Do not cut all the way through.
Stuff the chicken and poke a toothpick through it to cook it through.
Top off the chicken with lemon pepper and paprika
Cook in the oven on 375 for about 45 minutes or until cooked through.
Again, DON’T FORGET to take out the toothpicks!!!!!
Lazy Lucky Saturday!
I didn’t have much to do this weekend. I love having nothing to do, until it comes down to the fact that I have nothing to do. When that happens, my standard “go to” is to go shopping. As usual, I hit up all the Marshall’s in the Austin area. This was my lucky day!! I found a pair of brown riding boots that actually fit on my legs!! I found a pair the other day, but they were $150, and I’m cheap. I found these for $50. Since I got such a good deal, I decided I would just buy another fun pair for the winter!! Here are most of my new clothes. I was actually lucky and bought a few other things that are not in the pictures, too. 🙂
Riding boots are my favorite!! I just can’t usually find andy to fit my legs!! 😦 These are Unisa and fit!!
These were just fun boots, so I got them. They are Steve Madden boots.
Toe shoes
I’ve heard that the toe shoes are supposed to be really good for your feet if you are a runner. I think they are the funniest looking shoe around. They had some at Marshall’s so I decided to try some on. They are pretty comfortable, so I went ahead and bought them. I exercise so early that no one will ever see them if I decide I like them.
The best part of getting them was when my two year old nephew saw them on my feet. He pointed and just started laughing. It was so funny. It made buying them worthwhile. He made me take them off and when I sat on the couch he came from behind and threw them over and shouted, “ta da!!!” I tried to put them on his feet but he wanted nothing to do with them! It was all pretty amusing and I’m glad I bought them.
I love sundresses!!
Last summer all I wanted was tube top style dresses. This year, I’ve been wanting a one shoulder dress. I hadn’t been able to find any that I liked until I went to Marshall’s yesterday and this one was sitting in the Juniors department waiting for me. I’m not a junior, but luckily I can still wear some of the clothes. I wasn’t really sure where I was going to find shoes to match them, but when I left Marshalls, I stopped in to TJ Maxx and found these perfect flip flops to go with the dress. It was like they knew I needed them!!
It’s All About the Shoes!
I love shoes. I have way too many, but when I was in Dallas over the weekend, I decided I needed another pair. I’ve never really worn heels very often, but lately I’ve really liked all the heels I’ve found. I got these at DSW. I was excited because they were on the 40% off rack. I went through the store and found the same pair out on the floor, but they weren’t on sale. I feel like I got a deal!
It’s Flip Flop Season!!
To be honest, is it really ever NOT flip flop season in Texas? I’m pretty sure I wear mine year round. This weekend, Cooper took me leaving my favorite pair of day-to-day flip flops in the den as an opportunity to eat them, so when I ran out to buy a new hair dryer, I took the trip to the big city as an opportunity to stop in to Marshall’s to look for a new pair. I was looking for a more casual pair, but when I saw these Coconut flip flops with zebra stripes and flowers, I couldn’t resist buying them! I’m really not sure what zebra stripes and flowers go with, but I’m sure I’ll find something!
New Running Shoes!
When I got to my parents’ house after the ski trip, I went to get out my tennis shoes and realized that they had been packed in the suitcase that went home. I guess that’s as good of an excuse as any to go out and buy new ones! My mom and I loaded up the baby and rushed over to DSW because she had a $20 off coupon. I looked for a pair of Adidas, but they really didn’t have any that I would want to wear. Since all I have to wear here are Uggs and Cowboy Boots, I didn’t have the option of being picky, so I went ahead and tried out the Asics. I have worn them two times out to the Katy Trail since I bought them and I really like them. Maybe I’ll be changing over for good in the future!
