Cajun Chicken and Sausage

I’m doing the Transformation Challenge at Orange Theory, so currently really pushing myself to eat healthy. I’m tracking what I eat and trying to make good choices.  First week down and I did pretty good.  The key is all about being prepared. This week, I was prepared for lunch with this delicious meal!

Ingredients:

  • 1 container (28 spears ea.), Asparagus Spears
  • 1 container (16 oz ea.), Smoked Sausage
  • 1 tablespoon, Oil – Olive
  • 24 oz, Chicken
  • 2 squash, Cooked
  • 2 tsp, Cajun Seasoning

I used a wok, since it holds the most food of all my pans.  I put a little olive oil, then threw in the squash and zucchini.

Then I threw in the asparagus and sprinkled the cajun seasoning all over it.

Then I added the (precooked frozen) chicken and Ekrich Sausage. 

This is SOOO delicious!!! Definitely going to be a staple for my meal prep.

Apartment gardening

One of the things I miss about living in a house is that I don’t have a yard, so I can’t plant a garden.  I don’t really have a green thumb or anything, I just like to pretend!  I’m really lucky though, because my awesome new loft has a great patio.  I decided to use some of my patio space to plant a potted garden.  Right after I planted it, it got cold again, then it rained a lot, so I think that my plants may not make it, but I’m going to keep trying with them.  I planted a jalapeño pepper, squash, flowers, and tomatoes.  I’ve already had a huge harvest on my tomatoes as you will see in the picture!!

20140524-071610-26170246.jpgThe squash doesn’t look too good.  I read that when it gets yellow, it has too much water.  All the rain must not be good for it.

My tomato plan has lots of tomatoes on it. I hope the birds don’t figure it out and start eating them!! 20140524-071612-26172865.jpgMy first harvest!! I may never have to go to the grocery store again!!! lol

Hummus Crusted Chicken and Vegetables

I love to ride my bike, but I don’t feel safe riding on the streets, so I didn’t ride much when I was in Austin.  Since I’ve been back in Dallas, I have been trying to take advantage of being so close to White Rock Lake.  I rode around the lake this weekend, and saw a link to another trail.  I tried the new route called the Santa Fe Trail.  I went as far as Beacon St. and decided to turn around. I still have no idea how far that trail goes.  Once I got back to where I started, I made my way around the lake fighting the wind, but that silly old wind had nothing on me.  I beat the wind! It was a lot of fun and great exercise.  I think I’ll try to ride at least one time a week to get a little variations to my workouts.

This is by far the best main dish recipe that I’ve made from Pinterest.  I adapted this recipe from the Gimmesomeoven pin.  I never thought of cooking with hummus, but now I think it will become a standard on my grocery shopping list.  Not only was it good on the chicken, it made the vegetables taste AMAZING!!

Ingredients:
4 chicken breasts
Hummus (I used the garlic flavored one)
Squash
Okra
2 Lemons
1 tsp. of Paprika
Salt and Pepper to taste

Put a layer of squash and okra in a casserole dish.

Put chicken breast on top of the vegetables

Cover chicken in Hummus

Sprinkle paprika over the chicken, add salt and pepper and squeeze lemons all over the dish.  Make sure to get some of the spices on the vegetables

Bake in the oven at 450 for about 30 – 45 minutes

I wish I would have added more vegetables to my dish. Next time I’m going to add zucchini and tomatoes. I will also put a larger quantity of vegetables in the pan.  The vegetables were SOOO good.
