Hummus Crusted Chicken and Vegetables
I love to ride my bike, but I don’t feel safe riding on the streets, so I didn’t ride much when I was in Austin. Since I’ve been back in Dallas, I have been trying to take advantage of being so close to White Rock Lake. I rode around the lake this weekend, and saw a link to another trail. I tried the new route called the Santa Fe Trail. I went as far as Beacon St. and decided to turn around. I still have no idea how far that trail goes. Once I got back to where I started, I made my way around the lake fighting the wind, but that silly old wind had nothing on me. I beat the wind! It was a lot of fun and great exercise. I think I’ll try to ride at least one time a week to get a little variations to my workouts.
This is by far the best main dish recipe that I’ve made from Pinterest. I adapted this recipe from the Gimmesomeoven pin. I never thought of cooking with hummus, but now I think it will become a standard on my grocery shopping list. Not only was it good on the chicken, it made the vegetables taste AMAZING!!
Ingredients:
4 chicken breasts
Hummus (I used the garlic flavored one)
Squash
Okra
2 Lemons
1 tsp. of Paprika
Salt and Pepper to taste
Put a layer of squash and okra in a casserole dish.
Put chicken breast on top of the vegetables
Cover chicken in Hummus
Sprinkle paprika over the chicken, add salt and pepper and squeeze lemons all over the dish. Make sure to get some of the spices on the vegetables
Bake in the oven at 450 for about 30 – 45 minutes
I wish I would have added more vegetables to my dish. Next time I’m going to add zucchini and tomatoes. I will also put a larger quantity of vegetables in the pan. The vegetables were SOOO good.
‘STANG FEVER!!
My mom had a Mustang convertible when I was younger. Once she was done with it, my sister owned it until she got out of law school. I don’t think either of them ever really wanted to even give it up. So when I went to get a new car, I decided it was MY turn to own one!! I have been leasing a car for as long as I can remember. It has never been a problem for me because I don’t drive that much, so I can usually stay within the mileage allocation. The last car I got was a Volvo C70 and I loved it, but I was always worrying about miles. It’s probably my favorite car I have ever owned…until now!!
I went to Park Cities Ford yesterday to look at the Mustangs and ran in to my favorite Ford Car Salesman ever, Jeff Little. He didn’t waste my time and kept things moving. Most of the time you end up spending too long at the car dealership, but not with Jeff. He knows how to keep things on track and had me out of there with the most beautiful Ford Mustang ever! When they didn’t have exactly what I wanted, he personally went and picked up a different car from the sister dealership so I could have the perfect car. (I got the V6 with the pony package.) Genghis Grill
My mom and I went to eat at the Genghis Grill on Lemmon Avenue in Dallas tonight. She had never been there, so we thought it would be a fun place to try together. I really enjoy this place because I am a really picky eater and I get to choose which ingredients I want in my food. Another bonus about this location is that you don’t have to pay for parking. There is a garage underneath the building. The first floor was packed, so we parked on the lower level. The elevator lets out right at the grill. It was odd because we were the only ones in the restaurant when we got there. I think this place is always packed, but maybe with the holidays no one was out. It was nice to have the place to ourselves.
I learned the hard way that you have to heap the vegetables over the bowl. I made sure that my bowl would have had food dropping off the plate if I even attempted to add any more food. I got steak, shrimp, and scallops.
They cook all the food on this big grill. If you wanted to you could watch them cook your food. We just went and sat down and waited.
This is what my food looked like once it was cooked. I made two tacos with mine and then took the rest of the food home. I can’t wait to eat the leftovers tomorrow!!
