Cheese quesadillas
OMG!! I am out of chips, so I can’t make nachos! I almost had to go without dinner tonight until I found tortillas in my fridge. I decided I could make some cheese quesadillas. They are almost as easy to make as nachos and they have CHEESE!! I only had wheat tortillas, so I had to make due, but flour tortillas are better because they get pretty crunchy if you cook them long enough!
Melt butter in a pan
Put a tortilla on top of the butter and add cheese to the top of the tortilla. (You could put meats or veggies on here too, but I just like cheese.)
Put another tortilla on top of the cheese. Cook until brown on one side and then flip it over and get the other side browned.
Cut in to quarters and eat! Obviously I made 2 quesadillas. I was hungry, ok!?
Girl’s Fun Day and Rot Rally
I have such a fun group of friend. At Christmastime, one of my fabulous friends found a groupon for an hour at a photo booth. Being that this sounds interesting, she got one for her family and another one for her friends. Last night, we made a plan for six of us to head over to South Austin Gallery and have a good time taking silly pictures. I envisioned us all smashed in to a photo booth with silly hats on, but this was much more. They had a professional camera and a white backdrop and all of us got to dress up with silly props and take fun pictures. I can’t wait to see how these pictures turn out.
After the photo shoot was over, we headed over to the Rot Rally Parade. I have lived here for 6 years and I’ve never been in town on the weekend of Rot Rally. We went to watch the parade at the Stephen F. Austin Hotel on Congress street because that is where my friends always go to watch. When we got there, we found out that they had finally gotten smart and were charging to get out on the balcony. My beautiful friend started talking to the door man and he asked if we were sitting over there, so she said yes. He told us he had just gotten word that we were allowed to go out there for free. I’m not really sure where he got the word, but we took it! We grabbed our other girl friend and went out on the balcony and watched the parade from start to finish. As we were watching, our husbands got there and my beautiful friend got them in for free too! OMG! She saved us so much money last night!!! lol! The parade was probably the coolest thing I’ve ever seen in Austin. There were thousands of motorcycles up and down the street. They end the parade by parking them all in the center of Congress. It was so much fun! I hope we get to do this again next year. Maybe I’ll get my Vespa working and go out there and ride with them.

Warm Bean Dip
I think if you work around a lot of women, a pot luck is bound to happen. We were at training yesterday and the group decided that if we did a pot luck today and worked through lunch, we can get out early. I jumped all over that because we are supposed to be doing four day work weeks and today is supposed to be a day off anyway. Plus, I’m a morning person and by the end of the day I’m tired. The only issue I had with it is that I don’t live very close to a grocery store, so last minute pot lucks are not easy for me. I decided that I would make something that WOULD be easy for me, so I chose this bean dip recipe that I saw on Pinterest. The original recipe was found at the life at a loft house blog. Since I didn’t get home until late yesterday, I got up early this morning to make my bean dip. I hope it’s still hot by the time people want to eat it, but I kind of doubt it will be.
Ingredients:
1 8 ounce package of softened cream cheese
1 cup of sour cream
1 pkg. of taco seasoning
2 16 ounce cans of refried beans
4 cups of shredded monterrey jack/cheddar cheese
pre heat the oven to 350.
Mix the sour cream and cream cheese
Add in the two cans of bean dip and mix it really well
Add in the taco seasoning and mix it up
Put the bean mixture in a 9X13 baking pan with cooking spray.
Sprinkle cheese on top and then put in the oven (at 350 degrees) for 25 – 30 minutes or until the cheese is melted and/or a little brown.
Serve with chips!
Brie Bites
As usual, I was looking on Pinterest at all the delicious looking food and found a recipe for Brie Bites. I love brie, so this seemed like a match made in heaven for me. When I looked at the recipe up close, I felt like they looked kind of bland, so I made some adjustments. I’d say that this is the first recipe that is mostly mine. I figured everyone loves bacon, so I added that and apple to the recipe and got rid of the pecans. I was going to make these for one of the parties yesterday, but I think it’s better that I had the opportunity to try them out first. I’ll be bringing these to future party events because they are GOOD! Mike said he would add something spicy to the mix, maybe cayenne pepper or jalapeño peppers, but I don’t really like spicy.
Ingredients:
Phyllo tarts
bacon
brown sugar
apple
brie
Make some bacon bits
While bacon is cooking, put the phyllo tarts on a cookie sheet
Add brie to the phyllo cup
Top the brie with about 1/2 tsp of brown sugar
Top that with apple
Top that with bacon, put in the oven at 350 for about 15 minutes or until the brie is melted.
Let cool and eat!
Party Party Weekend
When I was in college, my favorite Joe King Carrasco song was Party, Party Weekend. I’m not really sure what happened to him, but I thought about the song because Saturday we had two parties to go to. One of them was a one year old birthday party. It was one of the best one year old parties I’ve been to because they had live entertainment that was geared to the kids and the adults. The family that had the party saw this singer at Pluckers in Round Rock one night and had such a great time with him there, they booked him for their baby’s first party. I had so much fun listening to him sing the songs that made fun of some of the lesser colleges. I wish I would have taped some of them to play for some of my loser Sooner friends. I think he plays there on Thursday nights. I think we’ll have to make a special trip out there to see him again.

I’ve always loved going to parties with piñatas. I think when I turn 50, I’m going to have a piñata at my birthday party. I was surprised because the kids left lots of candy on the ground. You never would have seen that in my day!

The second party was a graduation party. I didn’t take any pictures at the party, so I can’t share any of them, but this was a great party too. I kept asking the hosts if they wanted us to bring anything but they kept saying no. I told them that I was personally going to make something for the party and they laughed and said that they were glad they told me no. Later tonight I’m going to try the recipe that I was planning on making. If it is good, I’ll be making another post on here today to share. At the party they had a margarita recipe that was really good. All I know is that there was orange juice in the recipe, but I was told it was a secret recipe. I’m going to have to make it my mission to find out that recipe!
Is anyone else having problems with Pinterest? I have gone 3 days now without seeing anyone’s pin updates. I got off Facebook recently and now Pinterest isn’t even working. Today I started seeing a few pins, but not ones from the people that share the same interests as me. I hope that means they are trying to fix it. I wish I could see everything I’ve missed over the last few days!!
Also, if there is anyone on wordpress that is also doing amazon associate ads, can you please tell me how to add a widget? I can’t figure it out and all I get is a link to a deal of the day. It’s not attractive, so I doubt anyone will ever click on it. See my side bar if you are wondering what I’m talking about!!

New Furniture!!!
Ever since we moved in to our house, I’ve felt like we’ve needed another dresser for our bedroom. The model home had one, so I really needed one too. Since we already had a whole bedroom suit, it’s been kind of hard to find one that matches. Finally, we decided we’d just try to come close because our clothes were taking over the house. We went to a few furniture shops in Austin and finally found something that wasn’t overly pricey and looked good. Gage Furniture had all kinds of specials running and we even got to get a discount for paying cash. While we were there, we found a bench for the end of our bed. I’ve really always wanted a bench for the end of my bed, so we went ahead and bought that too! The bench even has two extra drawers!!! YEA! It all showed up today!! I can’t wait to start organizing the overflowing clothes.
